This fresh all natural caviar comes from the Steelhead fish – a sea run rainbow trout.

This is a highly sought after winter fish and it resembles a King (Chinook) salmon in color and texture, but with a decidedly light, clean flavor. Like most widespread fish the rainbow trout live in cold, flowing freshwater, but the steelhead also have ongoing spells in ocean seawater too.

The caviar that comes from this specific breed of fish is deep orange and the grains are of a medium size. The taste is a subtle mix of buttery, smokey flavours with hints of the ocean.
