Only the highest quality of fresh Scottish salmon from the Shetland Island is used to create this culinary delight.
After hand curing the fresh fillets with a mixture of pacific sea salt and brown sugar the salmon is smoked in whiskey barrels imported from Northern Scotland.
The salmon is then deep trimmed and 100% of the brown meat is removed then lain back on its own skin to preserve natural oils.With its rich buttery texture and medium sweet smoke flavour this smoked salmon melts in your mouth.
A 3/4lb side is $99 and this should serve around 8 to 12 people.
